Mother's Day Brunch - Blueberry Stuffed French Toast

HAPPY MOTHER'S DAY....!

I dedicate today's post to my beautiful mum. I know if she was here I would be  spoiling her with this brunch recipe I did  for my boyfriend this weekend. It is an easy quick brunch recipe that can go well with fruit, bacon and loads of Canadian maple syrup. It is now a family favorite and I know my mum would love this!





{I forgot to add butter for frying the toast}


{I STUFFED with Blueberry jam & cream cheese then, I fried for 1 min each side or until its golden brown}


{I topped off with maple syrup and blueberries, Enjoy mum!}

Ingredients:
2 oz cream cheese
1/2 cup of milk
2 tbls of blueberry jam
1/2 tsp vanilla extract
4 1 inch slices of Italian bread
2 eggs
1/2 tsp vanilla
Directions:
1. Spread the cream cheese and blueberry jam on bread, dip in milk, eggs, vanilla and cinnamon. Fry in skillet with 1 tsp of butter on each side. Serve with blueberries and syrup.
